The Break Relief Operator III mainly covers for Manufacturing Associate Level IIIs including: Pasteurizer-Batchers, Cheese Cooks, Milk Receivers and Blow Mold Machine Operators while they are on break or vacation. (S)he batches and pasteurizers product (including cottage cheese and sour cream), pumping incoming raw milk or cream from tank trucks into storage tanks, and runs blow molds and all related equipment.
Follow all required work safe practices. This would include compliance with Good Manufacturing Practices, wearing of all required PPE in designated areas, confined space safety, safe chemical handling, fall restraints, etc.
On any given day, the Break Relief Operator could be doing any of the following essential duties:
Essential Duties:
• Complete scheduled cleaning and quality checks
• Troubleshoot and resolve basic to moderate operating difficulties
• Closely monitor the dairy production process and adjust equipment as necessary
• Reassemble and prepare equipment after maintenance, clean up, and changeovers
• Ensure concentrations are taken with each CIP, monitoring flow and temperature
• Perform preventative maintenance and environmental cleanup
• Run Blow Mold and all related equipment
• Check security seals on bulk tankers and verify against the manifest
• Check all incoming tanker loads for order, temperature and taste
• Operate all computer-controlled product transfer equipment to transfer incoming product from incoming tanker trucks to the appropriate receiving tanks/holding silos in the receiving area
• Monitor all tanks, clamps and valves at start-up and during transfer process to detect leaks or improperly functioning equipment
• Prepare and maintain the appropriate records for Food Safety, Loss Control, Product Tracking, and Equipment operation, including the proper labeling of process charts
• Ensure curd is processed as soon as possible to protect curd freshness and texture
• Measure ingredients, mix ingredients, and batch products to meet recipe guidelines
• Take inventory and record lot numbers of ingredients used
• Expertly execute the pasteurizing process including homogenization
• Operate pasteurizing systems sending product to correct tanks or tankers
• Set up tanks and line circuits for CIP, test chemicals and adjust as needed
• Responsible for food safety, pre-requisite programs and food quality related to designated area
• Report any food safety and food quality related issues to management immediately
• Ensure all required information is documented in accordance with SOP's
• Follow Quality Assurance standards and collect required samples, as needed, for Quality Assurance testing
• Ensure all paperwork is filled out in a clear, legible and accurate format, and completed with required information
• Follow all required work safe practices. This would include compliance of Good Manufacturing Practices, wearing of all required PPE in designated areas, confined space safety, safe chemical handling, fall restraints, etc.
• Other work as needed.
Qualifications:
• High school diploma or general education degree (GED)
• 6+ months experience in dairy, manufacturing, or another related field preferred
• Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals.
• Ability to communicate when necessary to complete duties
• Able to work in a cold and wet environment for prolonged periods of time.
• Must be able to work in various temperature-controlled zones ranging from cold to hot
• Demonstrates a mechanical aptitude and can work and maneuver in tight and awkward areas and positions.
• Ability to operate equipment at recommended speeds and communicate mechanical and operational defects as they arise.
• Must be flexible and willing to work the demands of the department which may be subject to evenings, weekends and holidays
Physical Demands:
• Regularly stand; walk; stoop, kneel, crouch, climb, or crawl
• Ability to reach and handle objects, tools, or controls
• Occasionally sit and occasionally climb ladders or work on a platform
• Regularly lift and/or move up to 50 pounds
